I never got a chance to read the “Chicken Soup for the Soul” books that became so popular in the ’90s, but chicken broth has rightfully earned its reputation as a powerful antidote for the average head cold. This hearty soup can actually reduce the symptoms of an upper-respiratory cold, plus it can conveniently be slurped out of a mug while lying in bed.
Don’t forget the garlic, ginger, chili, and lemongrass. All boast wonderful immune-system-boosting properties, loaded with a cocktail of nutrients and compounds that will nurse your body back to health.

This recipe has it all: tons of healing properties and amazing flavor. We wouldn’t blame you if you pretended to be a little sick, cough-cough, just to have a bowl right now!
Here’s what you’ll need:
HEALING SOUP
4 cups chicken or vegetable broth
4 cloves fresh garlic, finely chopped
1 stalk fresh lemongrass, finely chopped
1 long green chili, finely chopped
2-inch nob ginger, finely chopped

14 ounces coconut milk
Optional- Add in noodles, greens such as spinach or kale, or chunks of chicken breast.
Directions:
1. Pour the broth into a large saucepan over high heat.
2. Add in the ginger, lemongrass, chili, and garlic.
3. Cover and reduce heat to low. Allow to gently simmer for up to 4 hours to allow the aromatics to infuse into the soup. You may cook for less time if necessary.
4. Pour in coconut milk, allowing it to heat all the way through.
5. If adding in optional ingredients, place into bowls prior to serving, then ladle soup over the top.
